Grateful Green Lemonade
Here we've turned our Generous Ginger Lemonade green by adding spinach and cucumber. Another way to broaden your juicing options and help the world go a little more green!
Makes a little more than 16 ounces (470 milliliters)
2 cups water
1/2 lemon, peeled and seeded
1/2 lime, peeled and seeded
1/4 cup coconut sugar
1 inch piece of ginger
1/2 cucumber, end trimmed and roughly chopped
handful of spinach leaves
Combine all the ingredients in a blender and blend on high speed until smooth. Strain through fine-mesh strainer, pressing on the solids to extract all the liquid, then pour into glasses and serve, over ice if you like, or pour unto a container, cover, and keep in the refrigerator until ready to use.
